Today we’re combining two of our favorite desserts into one magnificent mashup—Frozen S’mores ice cream sandwiches! Toasted marshmallow ice cream is swirled with a hot fudge ripple, stuffed between crisp graham crackers, and dipped in a sweet n’ salty milk chocolate hard shell coating for a frosty treat that’s both new and nostalgic.

While we’ve come up with tons of ways to level up your s’mores game over the years, these frozen s’mores ice cream sandwiches might just take the proverbial cake!

Ingredients

All in, this recipe requires just 12 basic ingredients. For the toasted marshmallow ice cream, you’ll need:

  • 2 ⅔ cup whole milk

  • 2 tablespoon + 2 teaspoon cornstarch

  • 2 ounce block-style cream cheese, softened

  • Scant 1 teaspoon fine sea salt

  • 1 ½ cup heavy cream

  • ½ cup sugar

  • ¼ cup light corn syrup

  • 1 cup mini marshmallows

To assemble, you’ll also need:

  • ¾ cup hot fudge, warmed until pourable (we like this recipe made with Oh My S’mores as the dark chocolate addition)

  • 12 graham cracker sheets broken into squares

  • 2 sweet & salty bars, chopped

  • 3 tablespoons coconut oil (measured while solid)

How to Make Frozen S’mores Ice Cream Sandwiches

Step 1: Prep. Make a slurry with the cornstarch and a few tablespoons of the milk. Set aside. In a separate small bowl, mix the cream cheese with the salt and set aside.

Step 2: Mix. Add the remaining milk, cream, sugar, and corn syrup to a 4-quart saucepan, whisking to combine. Heat over medium, stirring often to dissolve the sugar, until the mixture comes to a boil.

Step 3: Cook for 4 minutes at a boil, adjusting the heat down as needed if it looks like it might boil over.

Step 4: Thicken. After 4 minutes, add the cornstarch slurry to the pot while whisking constantly. Continue to cook and whisk until visibly thickened, about 1 minute. Remove from heat. Add about ½ cup of the ice cream base to the bowl with the cream cheese mixture, whisking until smooth. Pour the cream cheese mixture back into the saucepan with the ice cream base and mix thoroughly.

Step 5: Toast Marshmallows. Line a toaster oven pan (or small sheet pan) with parchment paper. Scatter the marshmallows out in a single layer. Broil at 400ºF for about 3-4 minutes, until the tops get deeply golden and toasty. Don’t take your eyes off them—they’ll go from perfect to burnt in a flash!

Step 6: Finish Base. Scrape the marshmallows into the hot ice cream mixture and whisk to incorporate. You’re welcome to leave a few chunks of marshmallow visible if you like.

Step 7: Chill & Churn. Pour the ice cream base into an airtight container and chill for at least 3-4 hours. Once chilled, pour into an ice cream maker and churn according to the manufacturer’s directions.

Step 8: Freeze. In the meantime, line a 9x13 baking pan with parchment paper, leaving a few inches of overhang to use as a sling. Pour the churned marshmallow ice cream into the prepared pan, drizzle on the warmed hot fudge, and use a butter knife to make swirls in the ice cream. Freeze until firm, about 4 hours.

Step 9: Assemble. Remove the ice cream from the pan using the parchment paper sling. Cover the top evenly with 12 graham cracker squares. Slice into squares, using the graham crackers as a guide. As you pull the parchment paper off the bottom, add another graham cracker square to make a neat sandwich. Repeat with the remaining 11 squares. Place the assembled frozen s’mores ice cream sandwiches back in the freezer while you prepare the hard shell dip.

Step 10: Make Hard Shell. Add the chopped sweet & salty bars and coconut oil to a microwave-safe bowl. Microwave in 30-second increments, stirring between each, until all the chocolate is melted and the mixture is smooth. 

Step 11: Dip & Serve. Line a baking sheet with parchment paper. Dip half of each of the ice cream s’mores into the hard shell, tipping the bowl toward you to make a deeper pool, then lay on the baking sheet to firm up. Feel free to repeat with another layer or two of the chocolate shell. You can either eat them straightaway or transfer them to an airtight container and freeze for up to 2 weeks. Enjoy! 

Optional Variations

  • Gluten-Free - Swap in certified gluten-free graham crackers. 

  • S’more S’mores - Double down on the s’more fun and use s’mores cookies or chocolate marshmallow brownies instead of graham crackers.

  • Pre-Dipped - Rather than making a sweet and salty hard shell to dip the assembled ice cream sandwiches in, start with chocolate-covered graham crackers instead.

  • Different Ice Cream - Our sprinkle dreams ice cream would be equally delightful in these frozen s’mores.

  • Shortcut - Instead of making the toasted marshmallow ice cream from scratch, purchase a quart of chocolate, sweet cream, or vanilla ice cream. Allow it to soften enough that you can stir in the marshmallows. They won’t melt into the base, but will create yummy little pockets of toasted marshmallow-y goodness throughout!

Expert Tips

  • In a rush? You can chill the cooked ice cream base down in a fraction of the time using an ice bath. Fill a large bowl with ice water (use plenty of ice!), then nestle the saucepan in, making sure the water doesn’t splash over the side. Whisk occasionally over the next 15 minutes until cool, then proceed with the churning step.

  • Parchment paper causing a fuss? If it’s rolling up on itself rather than staying in place, crumple it into a tight ball, then smooth it back out. If you need help getting it to stay put, use binder clips to hold it to the sides of your pan.

  • Warm, not hot. When you heat the hot fudge, make sure it’s just warm enough to be pourable. You don’t want it to melt your deliciously creamy ice cream!
