Happy Hispanic Heritage Month! This is a time to celebrate the culture, traditions, and flavors that have shaped so much of what we love. Here at Chuao Chocolatier, that celebration starts with our own roots. Our founder, Chef Michael Antonorsi, brought his Venezuelan heritage into every part of this company, from the name on our packaging to the bold, unexpected flavors in our chocolate bars. This month, we're taking a closer look at the story behind Chuao and the ingredients that pay homage to Latin flavors we love.
Meet Chef Michael, Our Venezuelan Founder
Long before Chuao Chocolatier existed, Chef Michael’s love affair with chocolate began. His ancestors owned Aguasanta, a small Venezuelan farm known for its fine cacao, so a love of chocolate was naturally in his blood. Growing up, his favorite childhood memories took place in the kitchen, standing by his German mother's side as she cooked. Between his Venezuelan upbringing and exposure to European cuisine, flavor and texture became his best friends.
Chef Michael didn't start out in the culinary world, though. He spent years working in technology before deciding to change course entirely, eventually training as a chef in Paris and turning his lifelong love of chocolate into a business.
When it came time to name the company, he looked to his heritage for inspiration. Chuao is a cacao-growing region, and the name was chosen to represent the quality of one of the best cacao-growing regions in the world. As Chef Michael put it himself, "Being from Venezuela, which produces one of the finest cacaos in the world, we started with this idea of bringing it directly to the US."
That heritage isn't just a footnote in our founding story, though. It's quite literally baked into many of the bold, spicy, and vibrant flavors we create today.
Flavors Inspired by Latin Heritage
Latin American cuisine is known for its bold use of spice, heat, and contrast. Several of our chocolate bars are a direct nod to those flavor traditions, transforming familiar Latin ingredients into unexpected chocolate pairings.
Our Firecracker Chocolate Bar brings the smoky heat of chipotle into rich dark chocolate. Chipotle, or smoke-dried jalapeño, is a staple in Mexican cooking. its deep, smoky flavor pairs surprisingly well with chocolate's natural bitterness, creating a bar that's warm, complex, and just the right amount of spicy.
Named after ancient Mesoamerican civilizations that were among the first to enjoy cacao as a beverage, our Spicy Maya Chocolate Bar combines cinnamon, pasilla chile, and cayenne pepper with dark chocolate. This blend is a tribute to the traditional spiced chocolate drinks that have roots stretching back thousands of years across Latin America, where chile and chocolate have always shared a table.
Churros are crispy, cinnamon-sugar-dusted fried dough beloved across Latin America and Spain, often enjoyed as an after-dinner treat or a sweet breakfast paired with hot chocolate. Our Cheeky Cheeky Churro Chocolate Bar captures that same cozy, cinnamon-forward flavor by folding churro pieces into creamy milk chocolate, giving you that beloved street-food flavor in every bite.
Mango, lime, and chile are a favorite flavor trio found throughout Latin American snacking culture, especially in Mexican street food where fruit is often served with a squeeze of lime and a dusting of chile-salt seasoning. Our Totally Tangy Mango Chocolate Bar channels that same bright, tangy profile, combining mango, lime, and sea salt with dark chocolate for a bar that's sweet, tart, and just a little salty, reminiscent of a familiar Latin street snack.
A Celebration Rooted in Heritage
What makes these flavors feel so authentic isn't just the ingredients; it's the story behind them. Chef Michael didn't set out to simply create spicy or exotic chocolate for novelty's sake. He built Chuao around the flavors he grew up with, the cacao his family knew and loved deeply, and the food culture that shaped his palate long before he ever put on a chef's coat. Every chili, every pinch of cinnamon, and every hint of citrus in our bars carries a little piece of that heritage forward.
