7 Sun Kissed Coconut bars
1 lb. of butter (4 sticks)
1 tsp vanilla
2 cups sugar
1 ¼ flour
1 tbs baking powder
1 tsp salt
2 cups toasted, shredded coconut
Preheat the oven to 350 degrees; grease a 9x12 baking dish.
Melt the butter and chocolate together. This can be done in the microwave or in a double boiler. Stir the mixture every minute until completely melted.
Allow chocolate and butter mixture to cool to room temperature.
In a large bowl, mix together the eggs, sugar and vanilla. Stir into the chocolate mixture.
In another bowl, combine the flour, salt and baking powder; fold into the wet mixture.
Fold in the toasted coconut, and pour everything into the prepared baking dish.
Bake for 35-40 minutes, until it does not “jiggle” and the edges pull away from the pan.
